A tasty collection of rigatoni recipes including this easy rigatoni pasta salad.
- 12 oz rigatoni pasta
- 1 red bell pepper, diced
- 1 English cucumber, diced
- 1 cup halved cherry tomatoes
- ¼ cup red onion, diced
- ¾ cup Italian dressing
Cook rigatoni according to package directions. Drain and run the pasta under cool water in a colander to cool off the pasta.
Place cooked rigatoni in large bowl. Stir in diced red pepper, cucumbers, red onion, and Italian dressing. Toss to combine.
Serve or cover and store in the refrigerator.
